Good morning, afternoon or evening! Welcome back for Day 6 of the WBB Advent.

I feel like so far all I've been doing is raving about my friends on this little series, and today is no different. 

Who are Coborn?

"The aim of sourcing and roasting consistently high-quality coffee whilst ensuring that it is accessible to as many people as possible was a conversation that would eventually lead to Coborn being founded by Kenny and Justin in an East London pub on Coborn Road.  

We only source coffee that comes from a named female-producer or a majority women-owned farm. Women make up the majority of the coffee production labour force but represent a shockingly small number of farm ownership.

It’s very easy in this industry to signal that you’re doing the right thing or allied to the correct causes but when you scratch a little, cracks often appear. We don’t want a veneer of righteousness, we actually want to ensure we are living out our beliefs. That means we feel the pinch a bit more because we want farmers to be paid well whilst not making the coffee completely unaffordable for our customers."

So what's the coffee?

Obviously we had to have the Pink Bourbon club up in this Advent.

Farm: La Castellana

Variety: Pink Bourbon

Altitude: 1700-1900MASL

Process: Washed

Let's get into it and brew!

For all coffees when tasting I used a 18g/225g recipe, which I feel really brought out the best in so many of the coffees I picked for the calendar (if you have a physical WBB advent, you have 22.2g (of course I had to include angel numbers) to play around with)

This coffee was SO FLORAL, like a bouquet of flowers on a fresh summers day (aw lovely) 

The brew was super. bright, juicy, light and subtle, as it cooled it became more berry focused, still with the underlying floral-ness but all I could taste was bright berries that reminded me of Christmas time.
